Recipe(tried): Meals to Freeze and Microwave

Recipe Collections
depending on your mother's diet restrictions, there are many things that can be made up to freeze and put in the microwave. Mashed potatoes and chicken breast freeze & microwave very well. Meatloaf, salmon loaf, lasagna works well. Also scalloped potatoes & ham or I have made up a macroni, hamburger, peas & tomato soup casserole that freezes & microwaves well. The tomato soup you just want to set on top and let your mother stir it in when you warms it up. Otherwise it soaks into the macaroni and then the casserole is pretty dry.

To serve approx 4 people:
1 cup macaroni
1/2 pound of hamburger
1/2 can of peas or 1 cup frozen peas
1/2 to 1 can of tomato soup (depending on how soupy you like it)

Hope that some of these ideas help you & I wish your mother a speedy recovery!
