03-21-2000 - 9 Meat Loaf and Meatball Recipes

1 lb lean ground beef
2 eggs
1/2 cup coarsely chopped Italian parsley
1 tsp coarsely ground black pepper
1 cup coarsely grated Romano cheese
1/2 cup plain bread crumbs
1 large garlic clove, peeled and minced
In a large bowl, combine the ground beef, eggs, parsley, pepper, cheese, bread crumbs and minced garlic. Using your hands, mix thoroughly. With wet hands form meatballs. Makes about 20- 24 meatballs. Place on a Pam-sprayed jelly-roll pan and bake in 350-degree oven for 15-20 minutes, turning once. Add to your favorite Italian sauce.

Sauce:
1 large onion, chopped

2 tabsp. each butter and olive oil
3 -16 oz. cans Hunt's tomato Sauce
Add 1 (empty)tomato sauce can of water
1 teasp. dried basil
1/2 teasp. dried oregano
1 tabsp. dehydrated parsley
1 bay leaf
1 1/2 cups burgundy wine
1/2 teasp. lemon pepper
1/2 teasp. salt
1 tabsp. sugar
Heat butter and oil in a 5 qt. Dutch oven. Saute onions 5 min. over med. heat. Add garlic and cook 1` min. more.
Add all remaining ingredients and simmer over low heat. Prepare meatballs.
Meatballs
1 lb. ground chuck
1/2 lb. ground veal
1/2 lb. lean ground pork
4 slices sandwich bread finely shredded
1 large egg, beaten
1/2 cup milk
1 tabsp. dehydrated parsley
1/2 cup grated Parmesan cheese
1 tabsp. Lea & Perrins Worcestershire
1/4 teasp. salt
1/2 teasp. lemon-pepper
Combine all ingredients for meatballs...try not to handle too much. Shape into desired size and place on a roasting pan lined with foil. Bake in a 375* oven 30 min. When lightly browned, gently drop into simmering sauce. Cover pot and simmer for another hour. You can add 1 lb. of Italian sausages at this point also when you add the partially cooked meatballs.

1/4 cup ketchup or chili sauce

2 teaspoons cider or white vinegar
Meat Loaf
2 teaspoons vegetable oil

6-8 ounces thin-sliced bacon (8-9 slices)
1. Glaze: Mix all ingredients in a small bowl; set aside.
2. Meat Loaf: Preheat the oven to 350 F. Heat oil in a medium
skillet. Add onion and garlic, and saute until softened, about 5
minutes; set aside to cool.
3. Mix eggs with thyme, salt, pepper, mustard, Worcestershire,
pepper sauce and milk or yogurt. In a large bowl add egg mixture to
the ground chuck, ground veal and ground pork. Next add the
oatmeal or crackers (depending upon what you have decided to add),
parsley, cooked onion and garlic; mix with a fork until evenly blended
and meat mixture does not stick to bowl. (If mixture does stick, add
additional milk, a couple tablespoons at a time, and continue stirring
until mixture stops sticking.)
4. Turn the meat mixture onto a work surface. With wet hands, pat
mixture into a loaf approximately 9x5 inches.
5. To bake free-form: Cover a wire rack with foil; prick foil in
several places with a fork to allow drainage. Place rack on a shallow
roasting pan lined with foil for easy cleanup. Set formed loaf on rack.
Brush loaf with all of glaze, then arrange bacon slices, crosswise,
over loaf, overlapping them slightly and tucking them under the loaf
to prevent curling.
6. Bake loaf until bacon is crisp and loaf registers 160 F., about 1
hour. Cool for at least 20 minutes. Slice and serve.
7. To bake in a loaf pan: Omit bacon and double glaze. Turn meat
mixture into a loaf pan WITH a PERFORATED bottom, fitted with
a drip pan. Use a fork to pull mixture away from pan sides. Brush
mixture with half of the glaze. Bake until glaze is set, about 45
minutes. Brush with remaining glaze and continue to bake until
second coat has set and loaf registers 160 F about 15 minutes longer.

1 medium yellow onion finely chopped (1 cup)
1 cup chopped carrot
1/2 cup chopped celery
1/4 cup chopped green onion
1/4 cup chopped mushrooms
2 cloves of minced garlic
1/8 teaspoon dried thyme
2 egg whites
1 cup fresh bread crumbs
1/2 cup catsup
1/4 teaspoon salt
1 pound ground turkey or chicken
1/2 pound of very lean ground beef or venison
Preheat oven to 375 degrees. Spray an 8x4-inch loaf pan with vegetable cooking spray. Set aside. In a large non-stick skillet, heat oil over medium-high heat. Add vegetables, garlic, and thyme. Cook, stirring until vegetables begin to soften, about 5 minutes. Transfer to a plate, cool slightly. In a large bowl, combine the egg whites, bread crumbs, catsup, and salt. Add turkey and beef, mix until well blended. Add to vegetable mixture, mix well. Press into pan. Bake about 55 minutes. Let stand 10 minutes before serving. Recipe can be doubled and used the next day for sandwiches. Sure beats bologna!!

Spread 1/4 cup catsup evenly over meatloaf. Bake an additional 15 to 20 minutes or until meat is well browned and thoroughly cooked. Allow to stand 10 minutes before serving

1/2 cup Oats
1 egg
1/3 cup Chopped onion

Preheat oven to 375 F. While oven is heating combine all ingredients in a bowl. Mix thoroughly and press into an 8x4 inch baking pan. Bake at 375 F for 1 hour. Sprinkle cheese on top about 15 minutes before the meatloaf is due to come out of the oven. Remove from oven and let stand about 5 minutes before serving.

1 carrot and 1 rib celery, minced
1 medium onion, minced
1/2 pound turkey "ham"......or use real sliced corned beef
1 pound ground chicken or turkey
1 cup rye bread crumbs
1/2 cup well-drained sauerkraut
1 cup, or more Swiss cheese, coarsely grated
1/2 cup prepared Thousand Island salad
dressing
1-Tbsp. dry mustard
3-Tbsp. Worcestershire sauce
1/2 teaspoon freshly ground pepper
1 egg
1. Preheat the oven to 350 degrees F. In a medium
skillet, heat the oil and cook the carrot and celery
over medium-low heat until the vegetables are just
tender, about 3 minutes. Cut the corned beef into
pieces and finely chop them in a food processor. In
a large mixing bowl, use your hands to gently but
thoroughly combine the ground turkey, bread crumbs,
sauerkraut, cheese, 1/4 cup of the Thousand Island
dressing, w. sauce, mustard, pepper, egg, cooked vegetables
minced onion and corned beef or turkey "ham".
2. Pat the mixture into meatloaf pan.
Spread the top with the remaining 1/4-cup
Thousand Island dressing. Bake until the meatloaf
is firm and the top is browned, 45 to 50 minutes.
Let the meatloaf stand in the pan for 5 to 10
minutes before cutting into squares to serve.
Yields: 6 servings....serve with applesauce and potato pancakes
Leftovers
Cut into slices and serve on toasted rye or
pumpernickel bread with lettuce and more Swiss
cheese and Thousand Island dressing.

1/4 cup milk
2 slices day-old bread, cubed
1/4 cup finely chopped onion
2 Tbsp finely chopped green pepper
1 tsp salt
1/4 tsp pepper
1-1/2 lbs lean ground beef
1/4 cup ketchup
8 med carrots, cut into 1-in chunks
8 small red potatoes
In a bowl, beat egg & milk. Stir in the bread cubes, onion, green pepper, salt & pepper. Add the beef and mix well. Shape into a round loaf. Place in a 5-qt. slow cooker. Spread ketchup on top of loaf. Arrange carrots around loaf. Peel a strip around the center of each potatoes; place potatoes over carrots. Cover and cook on high for 1 hour. Reduce heat to low; cover and cook 7-8 hours longer or until meat is no longer pink and vegetables are tender. Yield: 4 servings.

-2-Tbsp. brown sugar, more if you like it sweeter
1-tsp. dry mustard
2-Tbsp. soy sauce, or more to taste
celery seed, cloves, thyme, black pepper...and cayenne if you wish
*optional...chopped fresh cilantro
-About 2 lbs. ground chicken or turkey
-1- cup grated onion
1/2-cup ketchup
1-large onion chopped
-1 small green pepper, cut in thin slices
-1-1/2 cup dry bread or cracker crumbs
-1 can water chestnuts, minced
-1 or 2 eggs beaten

In a large skillet, saute, with the green pepper slices and onions for 2-3 min..
At the end, add some chopped scallions if you wish.
To this, add the sauce you have made in the following way;.....
Bring the liquid and spices mixture to a boil, stirring constantly. Add pineapple chunks, heat through. Pour over meatballs and simmer gently 3-5 min. or until chicken is cooked all the way through.
Serve over white rice or couscous. Serve a side of steamed carrots with lemon butter and mint.
Sprinkle with fresh lemon juice when you serve it!
Try serving with cucumbers in yogurt and mangos or mango ice cream for dessert.
