MEATLESS SLOPPY JOES
2 cups thinly sliced onions
2 cups chopped green bell peppers
1 can (about 15 ounces) kidney beans, drained and mashed
1 (8 ounce) can tomato sauce
2 cloves garlic, finely chopped
2 tablespoons ketchup
1 tablespoon mustard
1 teaspoon chili powder
Cider vinegar (optional)
2 sandwich rolls, halved (for serving)
Combine all ingredients except rolls in slow cooker.
Cover and cook on LOW 5 to 5 1/2 hours or until vegetables are tender.
Serve on rolls.
Makes 4 servings
