MEATLESS TAMALE PIE
Corn Meal Mush* (recipe follows)
1 large onion, chopped fine
1/2 green pepper, chopped
1/2 cup salad oil
1 (no. 2 1/2) can tomatoes (3 1/2 cups)
1 tbsp Spanish pepper, mixed with 1 tbsp water, until smooth
1 tbsp salt
1/2 tsp pepper
3 eggs, slightly beaten
1 can whole kernel corn
2 cups pitted ripe olives
1/2 cup grated cheese
Cook cornmeal mush as per instructions*.
Slightly brown onions and green pepper in oil.
Add tomatoes and seasonings and simmer for 20 minutes.
In a large bowl, slightly beat eggs. Mix in the mush, tomatoes, corn, and olives. Pour into a greased casserole dish and top with the grated cheese.
Bake at 350 degrees for one hour, or until firm.
*Multiples of this recipe with a salad and simple dessert is a general favorite with all ages.

2 cups milk plus 1 cup water
1 teaspoon salt
1 cup yellow corn meal
1 cup cold water
In large saucepan, bring milk and water to a boil; add salt.
In small bowl, mix corn meal with cold water.
Gradually stir corn meal mixture into boiling milk mixture. Cook 5 minutes, stirring constantly.
Cover, and continue cooking on low heat10 minutes, stirring occasionally.
