Italian Nonmeat Balls
Source: Everyday Tofu: From Pancakes to Pizza by Gary Landgrebe
Makes about 30 balls
1 lb. soft tofu, mashed well with a fork
2 eggs, lightly beaten
1/2 cup fine fresh bread crumbs
2 tsp. beef-flavored bouillon
1/2 tsp, onion salt
1/2 tsp. Italian seasoning or 1/4 tsp, each dried oregano and basil
1/2 tsp, garlic powder
3 tbsp. grated Parmesan cheese
1 tbsp. dehydrated onion flakes
1/4 tsp. pepper
1/8 tsp. nutmeg
Mix all ingredients together well in a large bowl. Form into 1-inch balls. Brown the balls in oil.
Use with your favorite spaghetti recipe or place the balls in an oiled baking dish and cover them halfway with your favorite Italian-style tomato sauce. Bake at 350F for 30 minutes.
