Recipe(tried): Mexican Christmas

My Mother was Mexican & Irish - we would traditionally have a large Mexican themed Christmas Eve or Christmas Day. I have followed the tradition with my own family and friends with a Christmas Mexican theme. I make many tamales dozens of tamales - beef, pork and vegetarian - well ahead of Christmas and freeze them. Defrost on the morning of use and steam in big pots. I serve it with several types of rice, a red mexican rice, an Arroz Verde (green rice), beans, a green salad, posole, Mexican Hot Chocolate (which is a bit more bitter than normal hot chocolate), plus an assortment of deserts including a simple caramel flan, a wonderful Apricot Tart with Cornmeal Crust, and Mexican Wedding Cookies and an Anise Almond Biscotti. We wear casual Mexican type dresses - very colorful and comfortable, have a traditional pinata for the kids, and food is served buffet style.
