Recipe(tried): Mexican Pinwheels & Mexican Buffet

Mexican Pinwheels
1 package ( 8 oz.) cream cheese
3 ( 12 inch) flour tortillas
1 1/2 tablespoons mild green chilies, chopped
1 ( 4 oz) can chopped black olives
4-5 squirts hot sauce
1 heaping tablespoon pimentos chopped
1-2 green onions chopped
Cream all ingredients toggether and spread on tortillas and roll up tightly. Refrigerate and then slice into rounds to serve.


Mexican Buffet
1 cup cheddar cheese, shredded
1 cup monterey jack cheese, shredded
1 cup sour cream
1 package ( 3 oz.) cream cheese, softened
1 can ( 16 oz.) refried beans
cup picante sauce ( mild, medium or hot)
2 tsp chili powder
tsp salt
Mix shredded cheeses together. Combine sour cream, cream cheese, beans, picante sauce, chili powder and cumin. Mix thoroughly by hand, electric mixer or food processor. Spread half of the mixture on the bottom of a square baking dish and cover with half of the shredded cheese. Add remaining bean mixture, top with remaining cheese. Bake at 350 degrees for 20 minutes or until heated through. Serve with tortilla chips.
Note: Spray the pan with a no-stick cooking spray to make clean up easier. If you prefer less cumin and chili powder, then use medium strength picante sauce. You can serve with chopped tomatoes and guacamole on the side.
