Hello Marcus,

I think the confusion with some recipes titled 'Mexican' is that Tex-Mex recipes
do very often include cheese. There has always been a good deal of 'food
sterotyping' with home cooks (and professionals) when naming recipes and I don't
think that will ever change. Typically:

few sprinkles of basil or oregano = Italian
salsa in the dish = Mexican
sauerkraut = German

I believe most cooks realize when a recipe is 'Mexican-style' or Italian-style'
versus authentic. Also, keep in mind that the United States is made up of people
of all nationalities so quite a bit of wonderful recipe-blending has happened
through the generations as friends and neighbors share recipes and create new
dishes together. And now we're fortunate to have the ability to extend the recipe
sharing (and blending of flavors, techniques, ingredients) worldwide over the
Net!
