Recipe(tried): Butternut Squash Soup (blender or food processor)

This is not au bon's soup but is excellent.

BUTTERNUT SQUASH SOUP

1/4 cup and 2 tablespoons chopped onion
1/4 cup butter
6 cups peeled and cubed butternut squash
3 cups water (or low sodium chicken broth)
4 cubes chicken bouillon, if using water only
1/2 tsp dried marjoram
1/4 tsp ground black pepper
1/8 tsp ground cayenne pepper
1/2 tsp Bon Appetit Spice by McCormick (a must)
2 packages (8 ounces each) cream cheese

In large pot, saute onions in butter until tender.

Add squash, water, bouillon, if using, and next 4 items. Bring to a boil, cooking 20 minutes or so until squash is tender.

Puree squash mixture and cream cheese in blender or food processor in batches until smooth.

Return to pan and heat through do not allow to boil.
