Recipe(tried): Mexicana Pork Chops

Main Dishes - Pork, Ham
I think you could adapt it for a pot luck, make it up then spoon over rice, and keep warm. maybe use boneless pork steaks and cut up into pieces after they have been baked.

MEXICANA PORK CHOPS

4 pork chops or pork steaks or country ribs
1/3 c. chopped onion
1 can cream of chicken soup
1/2 pkg. taco seasoning (1 1/2 Tbsp)

Trim all excess fat from pork chops. Saute onions in a large frying pan; remove and set aside. Brown pork chops in frying pan, placing in a casserole dish when browned. Stir 1/2 c. water into drippings in pan, stir in undiluted soup, taco seasoning and onions. Pour soup mixture over pork chops in casserole dish.

Bake uncovered in a preheated oven 350 deg. for 1 hr. Meanwhile, cook rice and serve with chops.

NOTES : The wonderful sauce that is created, is heavenly over rice! My own invention.
