Recipe: Pizza Variations (12)

Pizza/Focaccia
PIZZA ROLL (STRAMBOLI)
2 pizza dough (2 lbs.)
1/2 lb. salami
1/2 lb. Capocollo or Pancetta
(Italian bacon)
1 1/2 green bell peppers
1 1/2 onions
1/2 lb. Provelone cheese
Oregano & peppers to taste
Note: Make two individual rolls, split ingredients evenly. Roll out pizza dough to make a square sheet, about 12x12 inch or thinner. Layer above ingredients in order listed and roll to make one big loaf. Make sure the seam is at the bottom. Brush top of loaf with egg wash or water. This will give a nice shine on top. Bake at 350 degrees until golden. Let it get cool and slice. Serve warm or cold. This can be frozen in slices and reheated just before serving.


PIZZA MEAT BALLS
1 lb. ground beef
1 c. dried bread crumbs
1/2 c. milk
2 tbsp. instant minced onion
1 tsp. garlic salt
1/8 tsp. pepper
1/2 (8 oz.) pkg. Mozzarella cheese,
cut into 12 bite size cubes
3 tbsp. all-purpose flour
2 tbsp. cooking oil
1 (12 or 15 1/2 oz.) jar pizza or
spaghetti sauce
These can be served as main dish, or made into small balls and served in a chafing dish as hors d'oeuvres. In medium bowl, mix the first 6 ingredients well with fork. Shape mixture into 12 large meat balls, with 1 cube of cheese in center of each, making sure that cheese is completely sealed in with meat mixture. On wax paper, or in bowl, put flour and roll each meat ball lightly to cover with flour. In 12 inch skillet, over medium-high heat, it hot salad oil, cook meat balls until browned on all sides. Pour off fat. Add pizza or spaghetti sauce to meat balls in skillet; heat to boiling. Reduce heat to low; cover and simmer 10 minutes.

HOT PIZZA BITES
1 lb. sausage
1 lb. hamburger
1 lb. Velveeta cheese
1 tsp. oregano
1/2 tsp. garlic salt
1/2 tsp. Worcestershire sauce
1 can pizza sauce (favorite kind)
1 pkg. party cocktail rye bread
Brown the sausage and hamburg and drain well. Melt the Velveeta cheese with the meat mixture, then add the oregano, garlic salt and Worcestershire sauce. Mix well. Spread bread out on a cookie sheet and put 1 teaspoon of pizza sauce on each piece of bread and then add a heaping spoonful of the meat mixture on top. Cook for 10 minutes at 400 degrees. Can be made up ahead of time and then frozen until ready to serve.


MINI PIZZA TURNOVERS
2/3 to 3/4 c. spaghetti sauce
1/2 c. shredded mozzarella cheese
1 10 oz. can large flaky refrigerator
biscuits
20 very thin slices pepperoni (half
of a 3 1/2 oz. pkg.)
Preheat oven to 350 degrees. Halve each biscuit horizontally, forming 20 thin biscuits. Gently shape one piece of dough in an oval about 2 1/2 x 4 inches. Place a slice of pepperoni slightly off center on the dough. Place about 1 tablespoon sauce on the pepperoni. Top with a little mozzarella cheese. Moisten edges; fold dough over to enclose filling, pinchind edges to seal. Place on a lightly greased cookie sheet. Repeat with remaining dough. Bake for about 20 minutes. Serve warm.


PIZZA PULL APARTS (my husband and son love these)
2 tubes Pillsbury big county biscuits
2 15 oz. cans or jars of pizza quick sauce
2 c. cheese (Mozzarella, Cheddar or
combination)
Meat: pepperoni, sausage, hamburger,
etc.
Topping: olives, onions, green
peppers, mushrooms, etc.
Cut each biscuit into quarters, and place in ungreased medium roasting pan. Place meat on top of biscuits and pour pizza sauce over meat. Put on toppings and sprinkle cheese on top. Bake at 400 degrees for 20 minutes or until biscuits are cooked through. Take out pieces with fork.


PIZZA BALLS
1 lb. ground beef (ground chuck or round)
1 egg
1 c. bread crumbs
1/2 c. milk (may take a little less)
2-3 tbsp. onions, chopped very fine
3/4 tsp. salt
1/8 tsp. black pepper
1 clove garlic, chopped fine or 1
tsp. powdered garlic
Dash of hot sauce
1 jar Ragu Italian cooking sauce (21
oz.) (For more sauce add 8 oz. can
tomato sauce) Cheese (Mozzarella &
Cheddar), cut in cubes
Mix beef, crumbs, egg, onion, pepper, garlic, milk and hot sauce. Mix well but lightly. Roll into balls as large as you like. Place a cube of cheese in center of each ball. Cover cheese cube with the meat real good. Roll balls in plain flour. Boil in oil or Crisco, turning to brown on all sides. Place meat balls in pot and pour cooking sauce over them. Place 1 green pepper cut in strips and 1 large onion (sliced) in pot. Simmer gently 20 minutes. About 1 or 3 minutes before it gets done, I like to add 1 small can of chopped mushrooms to make it a special dish. Physical Therapy


VEGETABLE PIZZA (NEAT FINGER FOOD)
2 pkg. crescent rolls (unrolled)
1 pkg. env. Hidden Valley ranch mix
1 (16 oz.) sour cream
1 (8 oz.) cream cheese
1 pkg. hot shredded cheese
Chopped broccoli, cauliflower,
mushrooms (chopped small, shredded)
Cream Hidden Valley ranch mix, sour cream, and cream cheese. Lay crescent rolls unrolled on cookie sheet like large crust and bake at 350 degrees until golden brown. Cool. Spread cream mixture over crust. Sprinkle vegetables over cream. Sprinkle cheese last. Cut into bite size pieces. Easy no bake finger food (serves alot).

DOUBLE DUTCH PIZZA COOKIE
3/4 c. butter
1 c. sugar
1 egg
1 tsp. vanilla
1 1/2 c. flour
1/4 c. cocoa
1/2 tsp. baking soda
1/4 tsp. salt
3/4 c. multi-colored plain chocolate
candies (M&M's)
1/2 c. nuts, chopped
1/4 c. miniature marshmallows
1/4 c. flaked coconut
Preheat oven to 350 degrees. Cream butter and sugar until light and fluffy. Beat in egg and vanilla. In a separate bowl, combine flour, cocoa, baking soda and salt. Slowly add to creamed mixture, mixing very well. Fold in 1/2 cup candies and 1/3 cup nuts. Lightly grease a 12x13 inch round pizza pan.; then line with aluminum foil. Spread dough on pan to within 1/2 inch from the edge. Sprinkle with remaining candy and nuts. Sprinkle marshmallows and coconut evenly over dough. Bake 18-20 minutes or until edges are set. DO NOT OVERBAKE. Cool 10 minutes in pan and gently remove cookie with foil liner to wire rack. Cool thoroughly and then cut into wedges to serve.


STRAWBERRY PIZZA
1 pkg. refrigerator cookie dough
8 oz. cream cheese
1 c. sour cream
1 c. powdered sugar
1 pt. strawberries
1 (3 oz.) box strawberry gelatin
1 1/4 c. sugar
2 c. water
1/4 c. cornstarch
Spread refrigerator cookie dough on two 9-inch round tins or one 13-inch pizza pan for crust. Bake as directed and cool. Whip together cream cheese, sour cream, and powdered sugar. Spread on crust and arrange strawberries, cut in half, on top. PREPARE GLAZE: Mix together and boil until clear the water, sugar, and cornstarch. Stir in gelatin. Cool. Pour over strawberries. Garnish with whipped cream, if desired.


CHERRY CHEESE DESSERT PIZZA
Pastry for 2 crust pie
8 oz. cream cheese, softened
1/2 c. sugar
2 eggs
1 tsp. vanilla
Canned cherry pie filling (2 lb. 5
oz. size)
Roll pastry to 14 inch circle. Place in 12 inch pizza pan; flute edges, prick crust. Bake at 350 degrees for 15 minutes. Blend cream cheese and sugar. Add eggs and beat well. Add vanilla. Pour onto crust and bake at 350 degrees for 10 minutes. Cool. Spread cherry pie filling over cheese layer. Chill. Top with Cool Whip or whipped crream. Cut into wedges to serve. 10 to 12 servings.


APPLE PIZZA
2 c. Bisquick
1/2 c. cold water
4 med. apples, peeled & thinly sliced
1/3 c. brown sugar
1 tsp. cinnamon
2 to 3 tbsp. butter
1 c. Cheddar cheese, shredded
Mix first two ingredients, pat dough into pizza pan. Crimp edges. Spread apples over dough, sprinkle brown sugar and cinnamon over apples. Dot with butter, sprinkle cheese over top. Bake at 350 degrees for 30 minutes.


SUMMER PIZZA
1 roll Pillsbury sugar cookies
1 (8 oz.) cream cheese, softened
1/4 c. sugar
1 (10 oz.) can crushed pineapple
(drain and reserve juice)
1 1/2 tsp. cornstarch
Assorted sliced fruit
Kiwi
Strawberries
Green seedless grapes
Peaches
Blueberries
Mandarin oranges (drain and reserve
juice)
Bananas
Cut cookie dough; lay on pizza pan. Bake as directed and cool. Mix cream cheese and sugar and spread over dough. Spread pineapple over cream cheese, then layer fruit. Cook juice from mandarin oranges and pineapple with cornstarch until thickened, then drizzle over fruit and serve.
