ITALIAN STIR-FRIED PORK AND BROCCOLI
4 oz linguine or other pasta, uncooked
1 tbsp vegetable oil
1 to 2 tsp minced, peeled garlic
1 lb lean boneless pork loin, trimmed and cut in (1 1/2x1x1/4-inch) pieces
1 (13 3/4 oz) can chicken broth
2 bunches broccoli, cut into florets
1/4 cup freshly grated Parmesan cheese
Cook pasta according to package directions; drain.
In a 10-inch skillet heat oil over medium-high heat. Add garlic and 1/2 the pork and stir-fry about 2 minutes, until pork is lightly browned and cooked through. Remove with a slotted spoon and repeat with remaining pork. Pour off and discard any grease remaining in pan.
Add broth to pan and bring to a boil, scraping up brown bits from bottom of pan.
Add broccoli; cover and simmer about 7 minutes, until broccoli is crisp-tender.
Add hot, drained linguine and reserved pork pieces; toss to mix and sprinkle with Parmesan.
Makes 4 servings
