MICROWAVE LEMON CURD
1/2 cup unsalted butter
1 cup sugar
3 eggs
1/8 cup lemon zest
1/2 cup fresh lemon juice
In microwave-proof bowl, melt butter on high for 1 to 2 minutes.
In another bowl, combine sugar, eggs, lemon zest, and juice with a wire whisk.
Slowly whisk in the hot melted butter and microwave on High 3 to 4 minutes until thickened whisking well after each minute.
Pour into a clean glass jar and store briefly in the refrigerator.
