Recipe(tried): Spinach Marie

Side Dishes - Vegetables
I have enjoyed Hometown Buffet's Spinach Marie (and I thought that I didn't like spinach!) After looking for a recipe, I found one that was close and changed it a bit so that it was almost a copycat. Here it is. I hope you enjoy it!

Spinach Marie

4 eggs,beaten
1/2 c. milk
3 T. flour
1/2 t. salt
1/4 t. nutmeg
1 c. cottage cheese
1 c. Velveeta Cheese, in 1/2"cubes
1 10 oz. pkg. frozen chopped spinach, thawed and drained

Topping:
1/4 c. melted butter or margarine
2 c. fresh bread crumbs

Combine first 5 ingredients; blend well. Stir in cheese and spinach. Pour into greased 2 qt. casserole. Bake at 350 degrees for 30 minutes. Combine topping ingredients; sprinkle over casserole. Return to oven for another 30 minutes-or until knife inserted in middle comes out clean. Serves 8
