Recipe(tried): Microwaved Cherry Tomatoes

Microwaved Cherry Tomatoes

(from Farm Journal's Country-Style Microwave Cookbook, 1984) : Recipe has been modified, adapted over the years depending on availability of ingredients. Looks pretty and smells very good.

1 pt cherry tomatoes
3 tblsp butter or cooking oil or mixture of both
1 clove garlic (or a little garlic) powder
1/4 tsp. dried oregano (or basil, italian herbs, or other favorite herb)

Wash tomatoes and remove their stem.

Melt some butter or oil in a 1 1/2-qt glass casserole. Microwave at high power until melted.

Add garlic and oregano. Microwave at high for 2 min.

Add tomatoes. Microwave at high for 1 min.

Stir gently. Microwave1 min. more or until skin begin to split.

4 servings.
