Recipe: Pilaf (like Rice-A-Roni) (1987)

PILAF (LIKE RICE-A-RONI)

2 cups long-grain rice
1/4 cup uncooked vermicelli, broken into 1 to 2-inch pieces
1/2 cup margarine
5 cups chicken broth
Ground cinnamon (optional, for serving)

Brown the broken vermicelli in margarine until it takes on a golden brown color.

Add 2 cups of rice to the browned vermicelli and stir lightly until rice is crisp. Pour in the hot chicken broth; cover and steam over low heat for about 30 minutes.

Sprinkle cinnamon over the top before serving, if desired. This gives the pilaf a Middle Eastern flavor.

Makes 12 servings, 1/2 cup each
