MRS. BILLY G.'S MOUNTAIN PIE

Melt 1 stick oleo in a casserole in the oven. Mix: 1 c. sugar 3/4 c. milk 1 1/2 tsp. baking powder 1/2 tsp. salt Pour batter over melted oleo. Add 1 or 2 cups sweet fruit (apples, cherries, peaches, blueberries, etc.) over the batter but Do Not Stir. Bake for 45 minutes at 350 degrees.

COAL MINERS PIE
1 lb. hamburger
2 med. onions, chopped
1 can tomato sauce
2 med. green peppers
1 c. corn (canned or frozen)
1 to 2 tbsp. chili powder
Salt and pepper to taste
1 tbsp. shortening
1/2 c. buttermilk
3/4 c. cornmeal
2 eggs
1 tbsp. flour
1 tsp. baking soda
Preheat oven. Brown beef and onion. Stir in tomato sauce, pepper, corn, chili powder, salt and pepper; cook 15 minutes. Pour mixture into ungreased deep pie plate. Beat eggs, shortening, buttermilk for 1 minute. Beat in cornmeal, flour, baking soda, 1/4 teaspoon salt just until well blended. Spoon over top of meat. Spread evenly to cover surface. (Some of the mixture may run into the meat but it will rise during baking.) Bake in preheated 350 degree oven for 20 minutes or until wooden pick inserted in the cornmeal layer comes out clean.

COAL MINERS PIE
1 lb. ground beef
1 pkg. corn bread mix
1 (15 oz.) can whole grain corn,drained
1/2 c. green pepper, chopped
1/2 c. onion, chopped
1 sm. can tomato sauce
Brown meat, add peppers and onion. Cook until partially tender, drain. Mix corn bread as directed on package. In baking dish add meat mixture, mix and spoon corn bread mixture over top and bake at 350 degrees until brown. Serve with tossed salad, makes complete meal.

CORNISH MINER'S PASTRY PIE
1 1/2 lbs. extra lean ground beef
2-3 onions, diced sm.
2 c. carrots, shredded
6-7 potatoes, diced
1 c. shredded turnip (opt.)
2-3 tsp. salt
1/2 tsp. pepper
Mix all ingredients in a large bowl. Prepare a 4 to 5 pie crust recipe. Roll out about a 6"x8" piece. Place a good handful of mixture on the crust. Fold over the crust and seal edges like a turnover. Pierce top with a fork. Place on sided cookie sheet and bake approximately 1 1/2 hours at 350 degrees. Should make at least 6. Serve with ketchup.

COAL MINER'S PIE
1 lg. pkg. Oreos
1 lg. pkg. instant vanilla pudding
1 (8 oz.) pkg. cream cheese
1 stick margarine, melted
3 1/2 c. milk
1 lg. container cool Whip
Crush Oreos and set aside 1 cup. Place Oreo crumbs in bottom of 9x13-inch pan. Pour melted margarine over Oreos. Mix pudding with milk and blend in cream cheese. Spread on top of Oreo mixture. Top with Cool Whip and remainder of crumbs. Chill until ready to serve.

MINER'S PIE
2 c. flour
3 tsp. baking soda
1/2 tsp. salt
Water
Pie filling
Mix the flour, baking soda and salt. Add enough water to make a very stiff dough. Roll out on a floured board until about 1/8 inch thick. Cut into pieces about 6 inches in diameter. Place pie filling in the center (you can make your own with dried fruit as the miner's did or use canned pie filling). Moisten the edges with water, fold in half and seal. Fry in hot butter until golden brown.
