Recipe: Jam Dandy Muffins

JAM DANDY MUFFINS

1 2/3 c. all-purpose flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/8 tsp. nutmeg or cinnamon
1/3 c. shortening
3/4 c. milk
1 egg
Apricot jam
Chopped nuts (optional)

Preheat oven 400 degrees. About 12 muffins. In mixing bowl, combine flour, sugar, baking powder, salt and nutmeg or cinnamon. Cut in shortening until particles are fine. Add milk and egg; mix just until thoroughly blended. Spoon into greased muffin cups (cupcake papers work well). Place 1 teaspoon jam on top of each muffin, pressing into batter slightly. Sprinkle with a few chopped nuts. Bake at 400 degrees for 20 to 25 minutes until tops spring back when lightly touched. Serve warm. Tip: Other flavors of jam or marmalade may be used. These are great for breakfast!
