2 1/2 Tablespoons instant coffee
1 1/2 tablespoons skim milk
1/3 cup light brown sugar
1/4 cup granulated sugar
1/4 cup margarine
1 egg
1/2 teaspoon almond extract
2 cups all-purpose flour, sifted
1/4 cup wheat flakes cereal
1/4 teaspoon baking powder
1/2 teaspoon cinnamon
Preheat oven to 350 deg F. Spray cookie sheets with non-stick cooking spray. In small cup, dissolve coffee in milk. In large bowl, cream together sugars and margarine. Beat in egg, almond extract and coffee mixture. Stir together flour, wheat flakes, baking powder and cinnamon.
Beat into sugar mixture gradually. Drop by teaspoonfuls, 2 inches apart, onto cookie sheets. Flatten with back of spoon. Bake 8-10 minutes or until set. Remove from cookie sheets. Cool completely.
