Recipe(tried): Mock Duck Soup

Hi Jo,

Here's the mock soup recipe you requested. This was also made for the holidays for those who didn't like the real thing. Enjoy!

Mock Duck Soup

1 can of chicken broth or 16 oz. homemade broth
10 pitted prunes,finely cut up
1/2 cup raisins
1/2 apple, finely cut up
1 small onion, sliced and sauted
1/4 cup vinegar
sugar to taste
1/2 cup prune butter ( can substitute 1/2 cup prune juice)
pinch of salt and pepper

Mix all the ingredients in a large pot and simmer for 30 minutes. Remove from heat and add 2 Tbsp. cornstarch mixed with a little water, to thicken soup. Stir well and add 1 Tbsp. sour cream. Stir again and serve over noodles.
