Recipe(tried): Phils Inn Spaghetti Sauce (slow simmered in oven)

Fat Tony is right that Phil's is an "All Day" Sauce ... Slow simmered for hours.

I dated a girl who worked there in the 80's and she made the sauce at home all the time

The trick is to start off by browning some tomato paste in olive oil until its a rich dark brown almost burnt, this is called a tomato roux.

Build your favorite sauce from there by adding onions, garlic, brown sugar, oregano, basil, and pureed tomatoes.

Simmer in the oven in a enameled cast iron Dutch oven pot at 300 degrees F for 4 hours.

Some people like to add red wine to the sauce also.

It'll come out a deep rich reddish brown.
