Recipe: Molasses Spice Oatmeal Muffins, Oatmeal muffins with molasses forTania/Regina

Hi Tania :-) Here are two recipes that I found for you on the internet. I have not tried either one. The first seems to be a low fat recipe from the Quaker Oat Company. The second is one where you could probably substiute butter for margarine.

Molasses Spice Oatmeal Muffins
Makes 1 dozen

MUFFINS
1 1/2 cups all-purpose flour
1 cup Quaker Oats (quick or old fashioned, uncooked)
1/2 cup firmly packed brown sugar
2 teaspoons baking powder
1 teaspoon ground ginger
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
1/4 teaspoon ground allspice
1/3 cup fat-free milk
1/4 cup molasses
2 tablespoons vegetable oil
2 egg whites, lightly beaten
1 cup applesauce, any type

GLAZE
1/2 cup powdered sugar
2 to 3 teaspoons orange juice
1/2 teaspoon grated orange peel

Heat oven to 400F. Line 12 medium muffin cups with paper baking cups or spray bottoms only with cooking spray.

For muffins, combine dry ingredients in large bowl; mix well. Combine milk, molasses, oil and egg whites in medium bowl; mix well. Stir in applesauce. Add to dry ingredients all at once; mix just until dry ingredients are moistened. (Do not overmix.)

Fill muffin cups almost full. Bake 22 to 25 minutes or until wooden pick inserted in center comes out with a few moist crumbs clinging to it. Cool muffins in pan on wire rack 5 minutes; remove from pan.

For glaze, combine all ingredients in small bowl; mix until smooth. Drizzle over muffin tops. Serve warm.

Oatmeal Muffins
Makes 12 to 15 muffins

1 1/2 cups sifted unbleached, whole-wheat, or enriched flour
1/3 cup oatmeal
1/4 cup wheat germ
1/2 teaspoon salt
1 tablespoon brown sugar (or use honey to taste)
1 tablespoon dark molasses or honey
2 1/2 teaspoons double acting baking powder
1 egg, beaten
1 cup milk (or use cream)
3 tablespoons melted margarine or oil (You could probably use melted butter here.)
optional: add applesauce, raisins, and spices (although I'm not sure what spices were called for) (Here you could use the same called for in the above recipe, Tania - cinnamon, ginger and allspice)

Combine all dry ingredients.
Mix together the egg, milk, and shortening, and pour all at once into dry ingredients.
Stir briskly until moist but somewhat lumpy.
Fill greased muffin tins 2/3 full and bake at 425 degrees for 25 minutes.
