BLUEBERRY ORANGE LOAF
1/2 cup orange juice
1/4 cup boiling water
1/4 cup butter
1 tbsp orange zest
1 egg
1 cup sugar
2 cups flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 cup fresh blueberries
ORANGE GLAZE:
1 tsp orange zest
2 tbsp fresh orange juice
2 tbsp honey
Preheat oven to 350 degrees. Grease and flour a 9x5x3in loaf pan.
Combine orange juice, boiling water, butter, and orange zest; set aside.
Cream the egg and sugar until fluffy.
Combine dry ingredients and mix alternately with the orange juice mixture, beginning and ending with flour.
Fold in blueberries. Spoon into prepared pan.
Bake for 55 minutes. Cool in pan 10 minutes.
Remove from pan and finish cooling on a rack.
Combine ingredients for Orange Glaze; mix well and spoon over hot bread.
