I am compiling a cookbook of family favorites from my childhood up to and including our now much-changed eating habits. One reason I am doing this is to make it easier to locate the many recipes we have loved, instead of searching the NOT FEW cookbooks, files and magazines I have I will be able to (hopefully) just flip thru this large 3 ring binder containing recipes that have knocked our socks off over the years. Another reason is to be able to hand them down to my son and grandchildren. The process of doing this has brought back many happy memories. Here's my Mom's version of Wacky Cake, one I remember with fondness...
WACKY CAKE
From Mom
Makes 1 (8-inch) cake (double recipe for a 13x9-inch cake).
1/2 cup cocoa
1 cup sugar
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 Tablespoon vinegar
1 teaspoon vanilla
1/3 cup cooking oil
1 cup tap water
Preheat oven to 350 degrees F.
Stir all ingredients together until smooth. Pour into pan that has been sprayed with cooking spray.
Bake 30 minutes.
PENUCHE ICING
1/2 cup margarine or butter
1 cup brown sugar, packed
1/4 cup evaporated milk
1 3/4 to 2 cups powdered sugar
Bring margarine and brown sugar to a boil over low heat. Boil for 2 minutes, stirring constantly.
Add milk and boil again. Add powdered sugar.
Makes enough for a 13x9 cake
