Recipe: Monica, Here is the recipe for German Chocolate Upside Down Cake. Enjoy!

German Chocolate Upside-Down Cake

1 cup coconut
1 cup chopped nuts--I use walnuts or pecans
1 2-layer chocolate cake mix--German Chocolate or whatever kind you have on hand
1/2 cup melted margarine or butter
8 ounces cream cheese
1 1-lb. package confectioners' sugar

Preheat oven to 350 degrees.
Sprinkle coconut and pecans into a buttered 9 X 13" cake pan. Prepare cake mix according to directions. Spread the cake bater over the coconut and pecans. Blend margarine, cream cheese, and confectioners' sugar in another bowl. Mix until well blended. Spread the cream cheese mixture over the cake batter. Bake for 35 to 45 minutes or until cake tests done.

NOTE: I usually use 1/2 the box of confectioners' sugar and I add 1 tsp. of vanilla extract to the cream cheese mixture. When I use the whole box it seems to be a little too sweet.
