Recipe: Mother's S Cookies (using egg yolks and lemon rind, 1960's)

MOTHER'S "S" COOKIES

1/2 cup butter, softened
1/2 cup sugar
5 egg yolks, unbeaten
1/4 tsp. salt
1/2 tsp. lemon extract
1/4 tsp. grated lemon rind
1 1/2 cups all-purpose flour

Cream butter and sugar together. Add egg yolks one at a time, beating well. Add flavorings. Work in flour.

Drop by teaspoon on floured board. Roll into 5 or 6-inch strips with palm of hand and form Into "S" shape. Place on cookie sheet.

Bake in a preheated 350 degree F oven for 10-12 minutes.
