PINA COLADA PIE
1 (3 ounce) package orange-pineapple or orange gelatin
1/2 cup boiling water
1 cup liquid pina colada mix
1 (12 ounce) container whipped non-dairy topping, thawed
1/2 cup rum
1/2 cup well drained crushed pineapple
1 graham cracker ready-crust
Toasted coconut (optional garnish)
Dissolve gelatin in 1/2 cup boiling water. Stir in pina colada mix. Chill in freezer until set (about 45 minutes). Gelatin will not be hard set.
With electric or hand mixer, whip until light and fluffy. Fold mixture into whipped topping. Add rum and crushed pineapple to mixture. Pile high in graham cracker crust. Chill in freezer until frozen.
Garnish with toasted coconut if desired.
