Yes- it is darn close shrimp works nice with this too.
CHANGS LEMON SCALLOPS
Sesame oil
1 lb small to medium SEA scallops
1 egg, beaten
Potato starch (get this at a natural food store)
FOR THE SAUCE:
2 to 3 large lemons
2/3 cup water
1/3 cup sugar
2 green onions, thinly sliced
1 tsp chopped garlic
1 tbsp cornstarch
1/2 cup cold water
Hot cooked rice (for serving)
In Wok type pan, heat small amount of sesame oil (180 degrees F).
Dry scallops, dip in beaten egg, than roll in potato starch. Fry in oil for about 4-6 minutes a side depending on size (when you cut one it should be white inside not opaque). We cook ours in a few rounds and set them on paper towel, while we do the sauce.
TO MAKE THE SAUCE:
Juice lemons, minus seeds, keep a few thin slices of them to add to sauce. Stir in 2/3 cup water, sugar, green onions, garlic, turn on heat, stir til it boils. Mix cornstarch with 1/2 cup cold water and add to boiling mixture slowly to thicken, keep mixing, if it sits it will burn.
Remove from heat, add scallops. Serve with rice.
