Recipe(tried): Mozzarella Cafe Tomato Dill Soup

MOZZARELLA CAFE TOMATO DILL SOUP

1 cup finely chopped onion
1 cup finely chopped celery
1/2 cup butter
2 tsp minced garlic
1 tsp each dried basil and thyme
1 tsp tarragon (optional)
1/2 cup flour
3 cups chicken broth
1 (35 oz) can tomatoes with liquid
2 1/2 cups tomato juice
1 cup heavy (whipping) cream
1 tsp sugar
1 Tbsp fresh dill (for garnish)

Saute onion and celery in butter over medium heat for 8-10 minutes.

Stir in garlic, basil, thyme, tarragon (opt). Cook 1 minute.

Stir in flour, Cook 4-5 minutes.

Add chicken broth, tomatoes, tomato juice. Bring to boil. Simmer 10 minutes.

Stir in cream, sugar. Cook 5 minutes until heated through.

Just before serving top with fresh dill.

Makes 8 servings
