Recipe: Mushroom And Onion Egg Bake

Hi Barb, here is one for you...
MUSHROOM AND ONION EGG BAKE - SERVES 6
1 T. vegatable oil
4 green onions, chopped
4 oz. mushrooms, sliced
1 cup low fat cottage cheese
1 cup sour cream
6 eggs
2 T. flour
1/4 t. salt
1/8 t. freshly ground pepper
dash hot pepper sauce
Preheat oven to 350. Grease shallow 1 quart baking dish.
Heat oil in medium skillet over medium heat. Add onions and mushrooms; cok until tender. Set aside.
In blender or food processor, process cottage chese until almost smooth. Add sour cream, eggs, flour, salt, pepper and hot pepper sauce; process until combined. Stir in onions and mushrooms. Pour into greased dish. Bake about 40 minutes or until knife inserted near center comes out clean.
