Recipe: My Great Recipes Easy Party Salad and Chicken Tetrazzini (an note to Emma re: veg-cheese bake)
Recipe CollectionsADVERTISEMENT
Emma-- My card for the vegetable -cheese bake only differs from Sonia's in the amount of salt. My card says 1/4 tsp of salt. If that is not the recipe you wanted let me know I also found a card for cauliflower cheese casserole or a broccoli and cauliflower baked with cheese dish.
Rhonda-- I know it is too late for your party but I think I may have found your recipe. It is called
Easy Party Salad
Serves 4
1 head green leaf lettuce
1 banana sliced
1 red apple unpeeled diced
1 orange, peeled, cut into wedges
1 pear, peeled, diced
1/4 cup roasted peanuts
seeds of 1 pomegranate
1/2 lime thinly sliced
strips of orange peel
Lemon dressing
6 Tbsp olive oil
2 Tbsp lemon or lime juice
2 Tbsp red wime vinegar
2 tsp granulated sugar
1/4 tsp each salt and black pepper
line bowl or platter with whole lettuce leaves. Shred remaining lettuce. Add to bowl.
In separate bowl, combine banana, apple, orange, pear. Place over lettuce. Top with peanuts and pomegranate seeds.
Combine all dressing ingredients. Blend well. Pour dressing over salad. Toss well.
Garnish with lime slices and orange peel strips. Serve immediately.
TIPS- If sweeter taste desired combine the fruits with 1 tbsp of sugar and allow to stand 30 min before adding to salad.
Hope--
I do have the Chicken Tetrazzini and it is good.
8 oz thin spaghetti
2 Tbsp butter or margarine
3 Tbsp all purpose flour
1/4 tsp cayenne or black pepper
2 cups chicken broth
3/4 cup half-and-half
2 cups cooked diced chicken
3/4 cup Parmesan cheese
1 Tbsp lemon juice
1/2 lb sliced mushrooms
1/4 cup parmesan cheese
cook pasta "al dente" according to package directions
While pasta is cooking, heat butter in saucepan. Add flour. Cook for a few minutes, stirring. Add pepper and slowly stir in broth.
Bring to boil and simmer until slightly thickened. Stir in cream, chicken, and cheese.
Heat lemon juice in skillet. Saute mushrooms until juice cooks off, about 5 min.
Drain pasta. Combine with the cream mixture. Place half in shallow baking dish.
Spread mushrooms over pasta, reserving some for garnish. Top with remainder.
Sprinkle with cheese and reserved mushrooms.
Bake at 375*F for 20 minutes or until bubbly and lightly browned.
To reduce fat and calories, substitute evaporated skim milk for half-and-half. To reduce sodium, use no salt-added chicken broth.
If any one has the recipe for brownies that are like rocky road brownies I would appreciate it.
