Vegetable Cheese Bake
Serves 4
2 pkgs (10 oz each) frozen mixed vegetables
1/2 cup boiling water
1/4 cup butter or margarine
1/4 cup all-purpose flour
1 1/2 cups milk, scalded
1/4 cup grated Cheddar cheese
3/4 tsp salt
1/4 tsp black pepper
1/2 cup chopped green onions
1/4 cup pimiento
In a saucepan combine frozen veg. and boiling water. Bring to boil again. Cover and simmer 5min. Drain well.
Meanwhile, melt the butter in a saucepan. Blend in flour. Cook for 1 minute. Gradually stir in milk. Simmer, stirring, until smooth and thickened. Add cheese and seasonings. Mix in vegetables, onions and pimiento. Spread into butterted 1-qrt casserole.
Bake at 350 degree for 30 mins. or until bubbly.
Tips: Try your own combination of cooked vegetables in place of the frozen ones. Use Monterey Jack cheese if you prefer a milder flavor.
For 2 servings: Half of the ingredients. Decrease baking time to 20 to 25 mins.
Good served with baked ham or pork chops. Goes well with roast lamb or beef, grilled chicken or fish.
