Recipe: Neapolitan Candies

Hi...I found this recipe and it sounds similar to what you want, except that it calls for almond paste instead of coconut. Maybe somehow you could substitute coconut for the almond paste? I know the candy your talking about...its one of my favorites also, and I would prefer a coconut version myself. Maybe someone knows how we could substitute the coconut for the almond paste so its more original? Sandy G.

Neapolitan Candies
1 (8-oz.) can almond paste
1 tbsp. light corn syrup
1 tsp. almond extract
2 cups confectioners' sugar
2 tbsp. unsweetened cocoa powder
1 1/2 tsp. strawberry flavoring
2 drops of red food coloring
1 1/2 tsp. vanilla
In a medium bowl, crumble the almond paste by hand or with a fork. Mix in 1 tbsp. light corn syrup and 1 tsp. almond extract, then knead in 2 cups confectioners' sugar, 1/2 cup at a time, until mixture is smooth.
Divide evenly into thirds into 3 small bowls. Knead 2 tbsp. unsweetened cocoa into one-third, then press evenly into a buttered 9x9x2" baking pan. Blend 1 1/2 tsp. strawberry flavoring and 2 drops red food coloring into another third, then pat evenly over chocolate layer. Blend 1 1/2 tsp. vanilla into last third and pat over strawberry layer. Refrigerate to set. Cut candy into 2x1" pieces.
