HOT CROSS MUFFINS
2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 cup milk
1/3 cup butter, melted
1 egg
1 cup raisins (or candied fruit)
Icing (recipe follows)
Preheat oven to 350 degrees F. Grease 12 muffin pan cups.
Sift flour, sugar, baking powder, cinnamon, nutmeg and salt together; set aside.
Stir milk, butter, and egg together and mix into flour mixture until slightly blended. Fold in raisins or candied fruit until mixed. Place batter in prepared muffin pan cups.
Bake for approximately 20 minutes, or until lightly browned. Cool.
When muffins are cooled, pipe icing in a cross across on the top of each muffin.
ICING
1 cup confectioner's sugar
2 tablespoons milk
1 tablespoon melted butter
1/2 teaspoon vanilla
Beat all ingredients for the icing together until well blended, about 3-5 minutes.
Makes 12 muffins
