Recipe: No Bake Butterscotch Bars, Butterscotch Bars 1, Butterscotch Squares for Trina
Desserts - Cookies, Brownies, BarsHi Trina :-) Here are 3 recipes that I found on the internet. I have not made any of the recipes.
NO BAKE BUTTERSCOTCH BARS
1 cup granulated sugar
2 beaten eggs
3/4 cup margarine
2 cups graham cracker crumbs
2 cups miniature marshmallows
1 cup coconut
1/2 cup pecans
1/2 cup peanut butter
6 ounces butterscotch chips
Cook first 3 ingredients over low heat, stirring constantly, for about 5 minutes. Cool, then add the next 4 ingredients. Pour into a lightly greased 13 x 9-inch pan. Melt peanut butter and chips and spread over top for frosting. Refrigerate in warm weather.
Butterscotch Bars I
Makes 5 dozen (30 servings).
3 cups zwieback cracker crumbs
2 cups miniature marshmallows
1 cup chopped pecans
2/3 cup packed brown sugar
1 cup evaporated milk
2 cups butterscotch chips
1/2 teaspoon vanilla extract
In a large bowl combine zwieback crumbs, marshmallows, nuts and brown sugar.
In a saucepan over low heat cook the evaporated milk and butterscotch chips. Stir mixture constantly until the chips have melted and the mixture is smooth. Reserve 1/2 cup of the butterscotch mixture for glaze. Combine the
remainder with the dry mixture and mix well.
Spread batter into one 8 inch square buttered baking pan. Drizzle reserved butterscotch mixture over the top.
Refrigerate bars for several hours or overnight before cutting and serving. Store leftovers in a covered container in the refrigerator.
Butterscotch Squares
Makes 24 bars (24 servings)
2 cups butterscotch chips
1/2 cup butter, melted
1 cup peanut butter
4 1/2 cups miniature marshmallows
2 cups crispy rice cereal
LIne a 9x13 inch pan with parchment or waxed paper.
In a microwave safe bowl, melt butterscotch chips in the microwave or over a double boiler, stirring every 30 seconds until smooth. Stir in the melted butter and peanut butter. Measure the marshmallows and rice cereal into a large bowl. Pour the butterscotch mixture over the marshmallows and cereal. Stir to coat evenly. Press onto the prepared pan.
Chill for 20 to 30 minutes, until set. Cut into bars. Store leftovers in the refrigerator.
