SNOWBALL COOKIES
1 cup margarine, softened
1 cup sugar
1 teaspoon vanilla extract
1 1/2 cups pecans, finely ground
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup powdered sugar
Preheat oven to 350 degrees F.
In large bowl, with electric mixer at medium speed, beat margarine, sugar and vanilla until creamy. Blend in pecans, flour and salt. Shape dough into 1-inch balls. Place on ungreased baking sheets, 2 inches apart.
Bake at 350 degrees F for 10 to 12 minutes. Remove from sheets; cool on wire racks.
Dust cooled cookies with powdered sugar. Store in airtight container.
