Recipe: Nut and Cherry Loaf (with anise flavor)

NUT AND CHERRY LOAF

1 cup sugar
2 tbsp. Crisco vegetable shortening
2 tbsp. margarine, softened
6 eggs
2 tsp. anise flavoring
3 cups flour
2 tsp. baking powder
1 (6 oz.) jar red maraschino cherries, chopped (reserve cherry juice for icing)
1/2 cup nuts, chopped
powdered sugar (for icing)

Preheat oven to 350 degrees F.

Cream together the sugar, shortening, and margarine. Mix in eggs and anise flavoring.

Combine flour and baking powder and add gradually to creamed mixture. Stir in chopped cherries and nuts.

Place dough on greased cookie sheets in loaf fashion, separating loaves with aluminum foil. (If mixture is too thin, you may use greased loaf pans.)

Bake at 350 degrees for 1/2 hour.

Ice with mixture of powdered sugar and reserved cherry juice.
