Recipe(tried): Nut Loaf with Almond Sauce

Nut Loaf with Almond Sauce

This loaf is a great traveler, good hot or cold, with or without the sauce. Make a double batch, keeps well in frig. Freeze for a busy day.

LOAF:

1/2 cup Brazil nuts
1 cup almonds
1 cup sunflower seeds
1/4 cup flax seed, ground
1/4 cup water
2 small onions, diced (optional)
1/2 cup parsley, fresh
1/2 teaspoon sage
1/2 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon swet basil

Grind nuts and seeds in a processor, blender or grinder. Combine remaining dry ingredients, mix well. Add the water, mix again. Place in a well oiled loaf pan and bake for 25 minutes at 350 derees F.

SAUCE:

1/2 cup almonds, ground
2 cups water
1 tsp. seasoning (sage, thyme, basil, garlic)any kind you like
2 tablespoons arrowroot flour
Dash of cayenne pepper
2 tablespoons oil
1/2 teaspoon salt

Sauce: Combine all ingredients, mix well in small saucepan, bring to boil, (stir constantly) reduce heat, simmer over low heat until thick. Pour over cooked loaf. Serve hot.
