Nutty Noodles
Fettuccine sauced with peanut butter and tomato juice makes for a different, but easy and tasty side dish. It is also substantial and nutritious enough to be a meatless main dish.
Yield: 4 side dish servings or 2 main dish servings.

8 ounces Fettuccine, cooked and drained
1 small onion, chopped
1 teaspoon vegetable oil
3/4 cup tomato juice
3 tablespoons creamy-style peanut butter
1 teaspoon soy sauce

In a microwave-safe bowl, stir onion and oil. Cover and microwave on high for 3 to 4 minutes, until onion is tender. Stir in peanut butter and stir until melted. Add tomato juice and soy sauce and stir to blend. Microwave for another minute or two, until sauce is hot and smooth.

Toss sauce with Fettuccine. Serve immediately.
