Zucchini Medley
A good way to use extra zucchini.

2 cloves garlic, crushed
1 tbsp. oil
1 medium onion, chopped
1 medium zucchini, cut in cubes
1 cup fresh peas or snap peas
1 tsp. basil
dash salt
1/4 tsp. black pepper
12 cherry tomatoes, split in half

Saute the garlic in oil until lightly browned.
Add the onion and cook for a minute; add the zucchini, peas, basil, salt and pepper and stir-fry for a couple of minutes. Add the tomatoes and cover the pan; cook until the vegetables are fork tender.
