OATMEAL FIG BARS
"An easy way to make healthy, homemade fig bars. These make a good breakfast treat because they're not too sweet and are made with oatmeal."
FOR THE FIG FILLING:
1 cup cut-up dried figs
1/3 cup granulated sugar
1/2 cup water
FOR THE OATMEAL DOUGH:
1/2 cup butter or margarine, softened
1/2 cup brown sugar
1 cup quick cooking oats, uncooked
1/4 cup hot water
1/2 tsp. baking soda
1 1/4 cups all-purpose flour
1/4 tsp. salt
TO PREPARE THE FILLING:
In a saucepan, combine the figs, sugar and water. Cook over medium heat, stirring occasionally until mixture thickens. Cool.
TO PREPARE THE DOUGH:
Cream butter and sugar until light. Stir in oats. Mix well.
Dissolve baking soda in hot water. Mix combined flour and salt into the butter mixture alternately with the liquid. Wrap dough in wax paper, it will be sticky. Flatten a bit. Place in freezer to chill.
Roll out dough on a lightly floured board to a 1/4-to 1/8-inch thickness. Spread filling over half of dough. Fold other half over filling.
Cut into 1 1/2-inch squares. Place on a greased cookie sheet.
Bake at 350 degrees F for 20 minutes. Remove to a rack to cool. Store in a tin
