Gina,.Fla (09:28:13) : Beaulah's Cobbler
This is David, VA friend's recipe

1 Cup Flour
1 Cup Sugar
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
1/2 cup butter, melted (1 stick)
2 Cups fresh fruit... Peaches (skinned, sliced), Blueberries, or Blackberries
1 Tablespoon of Sugar
1 Teaspoon of Cinnamon

Combine the flour, sugar, baking powder and salt, and mix together.
Melt the butter and then mix with the 1 cup of milk.
Pour the milk/butter mixture into the dry ingredients and stir together until thickened to a batter.

Pour the batter into a greased 12 x 8 x 2 inch "glass" baking dish.
Lay the fresh fruit on top of this batter, distribute it all over the batter evenly.

Mix the 1 tablespoon Sugar and 1 teaspoon cinnamon together, then lightly sift it over the batter/fruit.

Place the pan into a 350* oven and bake for 50 minutes, or until it all turns lightly brown.

Now, that's all there is to it. Take this gem of a recipe out of the oven and serve it up with that "nilla ice cream and it will just melt your heart!

Marie,Ohio (09:24:10) : Orange Roughy with Vermicelli

1 large can crushed tomatoes
1/2 large green pepper chopped
1/2 medium onion chopped
1 clove garlic minced
1 t. bouillon
1 bay leaf
1/4 t. thyme leaves
1/2 t. salt-free herb seasoning..( Mrs. Dash)
pinch red pepper
1 lb. Orange roughy cut into 4 equal pieces
3/4 lb. uncooked vermicelli

Lightly brown pepper/onion
add crushed tomatoes and all seasonings.
bring to boil simmer for 15 minutes..
add Orange Roughy and simmer gently for another 10 minutes..or until fish flakes easily with fork.

Prepare vermicelli as directed..
arrange on platter
top with fish and sauce..
serves 4

Kelly,WA (02:36:48) : Birria

1 Kilo (2.lbs.) of beef rib in pieces.
6 cloves of garlic
1 onion
3 laurel leaves
1 pinch of cumin
chili guajillo as desired
salt
pepper

Procedure:

1. Cook the meat with the garlic and onion in enough water to immerse them.

2. Toast, hollow out and soak the chiles (approximately 5 minutes). Liquefy them in the water they
soaked in.

3. Strain the sauce from the chili into the pot in which the meat is cooking. Add 3 small laurel leaves,
cumin, salt and pepper. Wait until the meat is well cooked.

Salsa for the Birria:

Ingredients:
1/2 cup of vinegar
2 pieces of garlic
chili piquin or chili de arbol as desired

Soak the chili and garlic in vinegar and grind. Serve with chopped onion, sliced limes and oregano.

1 c. dried red beans, soaked overnight
3 c. water
Salt and freshly ground black pepper to taste
3 T. bacon drippings or one small ham hock
1 small onion, studded with 2 whole cloves
1 cloves garlic, finely minced
1 rib celery. chopped
1/4 c. finely chopped parsley
1 bay leaf, broken into pieces
1 c. rice, cooked according to package directions

Drain beans and place in heavy kettle with water, salt, pepper and bacon drippings or ham hock. bring to a boil and simmer one and one-half hours. Add onion, garlic, celery, parsley and bay leaf. Return to a boil and cook one hour longer. Serve on hot rice. Four servings.

Susannahoh (01:54:32) : Red Beans With Rice

2 c. dried red beans or kidney beans
6 c. water
1/2 c. bacon drippings
1 onion
Hot cooked rice

Wash beans well. Drain. Put in a large bowl and add the water.
Heat bacon drippings in large kettle or Dutch oven and cook onion in it gently, stirring occasionally, until onion is amber colored. Add beans with their water and bring to a boil. Partially cover and cook 3-4 hours, or until beans are tender and mash easily. Add more water as beans cook and stir occasionally to prevent them sticking. When ready to thicken, mash a few beans to thicken the lot. Serve over hot cooked rice. Six servings.
