Crab Cooker Tartar Sauce (copycat recipe)

TARTAR SAUCE LIKE CRAB COOKER

For the better part of Dick's life, he has been trying to duplicate the tartar sauce served at the Crab Cooker in Newport Beach. It is tasty and "light". Most of this recipe is from Dick's Tartar Sauce recipe, except for the last ingredient which makes it "light" right! Denise came to the realization what the magic ingredient was when she tried to freeze Crab Cooker Tartar Sauce.

If you enjoy the specific taste of this tartar sauce, please use the brands specified it matters.

6 or 7 slices Claussen kosher dill sandwich slices (cold section of grocery store)
1/2 red bell pepper
1 small sweet onion (Maui, Vidalia, Joe's..etc)
1 to 2 tsp rinsed capers (available @ Trader Joe's, but any brand fine, just rinse first)
1 clove garlic, pressed
2 cups Best Foods mayonnaise (Best Foods light is what I use definitely use Best Foods brand)
1 to 2 tsp Trader Joes hot & sweet mustard (other honey mustard will be fine)
1/2 really good lemon, squeezed
1 + tbsp juice from Claussen pickles
1 cup heavy whipping cream

Finely chop pickles, peppers, onions, capers. Add to rest of ingredients, except heavy cream; set aside.

Whip heavy cream with an electric mixer until stiff. Add to above mixture. Salt and pepper to taste

Makes 6 cups - keeps in frig for a few weeks
