Recipe(tried): Old Fashioned Meat Loaf Dinner, Mashed Potatoes with Garlic and Sour Cream, Grandma's 1930's Chocolate Sour Cream Cake

I decided to make a meatloaf for tonight's dinner as my husband and I leave for a business trip to Sarasota tomorrow and won't be back until Friday. My Mom will be here taking care of the kitties and home and the meatloaf comes in handy for sandwiches, which she loves.
This is a delicious and comforting meal evoking warmth and love and memories of childhood...

Old Fashioned Meatloaf
1 1/2 lbs. ground sirloin
2 eggs beaten
1 c. Italian Bread crumbs seasoned with 1/3 c. Parmesan
1 c. milk
1/2 c. finely minced onion
1/4 c. fresh chopped parsley
1/4 c. finely chopped green pepper
1/4 c. finely chopped red pepper
2 T. worcestershire sauce
1/2 t. black pepper
1/2 t. salt
3 garlic cloves pressed
1/8 t. thyme
Glaze: 1/2 c. ketchup, 1T. brown sugar, 1 t. dijon mustard, 1 t. worcestershire sauce
Preheat oven to 350. Litely oil a loaf pan.
In a large bowl combine all ingredients except glaze ingred. Mix well and place in prepared loaf pan. Bake 1 hour. Meanwhile, mix glaze ingred together. Brush meatloaf with this and bake an additional 10 mts. Remove from oven and let sit 10 mts. before slicing.
Mashed Potatoes with Garlic And Sour Cream
6-8 potatoes, washed, peeled and cubed
1 stick butter
1/2 c. sour cream
salt and pepper
3 garlic cloves
1/4 c. milk or more if needed
Boil potatoes and the garlic cloves together. When tender, mash with potato masher, add butter and mash some more, add sour cream and enough of milk to your liking for consistency. Season with salt and pepper.
Serve with peas and corn (simply from the can)
Grandma's 1930's Chocolate Sour Cream Cake
1 stick (1/2 cup) butter
2 1/2 oz. unsweetened chocolate
1 egg
1 c. sugar
1 c. sour cream
1 1/4 c. sifted cake flour
1/4 t. baking soda
Grease 2 layer pans or bundt pan. Melt butter and chocolate over low heat. Beat egg, add sugar and beat well. Add sour cream and beat. Sift flour with baking soda and mix in by hand, do not beat in. Add melted butter and chocolate and hand mix. Pour into prepared pan and bake at 350 45 min. for bundt pan or 30 min. for the layer pans. Cool 10 min. Invert and cool completely.
Old Fashioned Frosting:
3 1/2 oz. unsweetened bakers chocolate
3 T. butter
3 c. sifted confectioner's sugar
1/4 t. salt
1/4 c. milk
1 t. vanilla
dash of instant coffee granules
Melt the chocolate and butter. Blend all the remaining ingred. and add to the hot chocolate mixture. Let stand in cool place until ready to use.
