Recipe(tried): Old Kentucky Nut Cake

Misc.
I don't know if this is what you're looking for, but it's a good one; can be made with hickory nuts, too, if you have them. They are my favorite!

Old Kentucky Nut Cake

2/3 cup butter
1 2/3 cups sugar
3 eggs
2 3/4 cups Softasilk cake flour
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
1 teaspoon vanilla
1 1/3 cups walnuts -chopped

Pan: 2 9" Round cake pans - greased and floured
Oven: 350
Time: 25 to 30 minutes or until cakes test done.

1. Cream butter and sugar.
2. Beat in eggs.
3. Sift together flour, soda, and salt.
4. Add and beat until smooth, alternately, flour, milk and vanilla.
5. Fold in chopped nuts.
6. Bake.
7. Cool in pans on racks for 10 minutes.
8. Remove from pans and cool on racks.

Caramel Icing

1/2 cup sugar
1/4 cup boiling water
6 tablespoons butter
1 cup Whipping Cream
3 cups powdered sugar
1/3 teaspoon salt
1 teaspoon vanilla

1. Melt sugar in small heavy sauce pan.
2. Add boiling water.
3. Stir until all lumps are gone.
4. Cool.
5. Add butter and enough cream to make 1/2 cup.
6. Beat in sugar, salt, and vanilla.
7. Frost cake.
8. Garnish with walnut halves.
