Recipe: Old Time Apple Pie (using brown sugar, nutmeg and lemon)

OLD TIME APPLE PIE

pastry for 1 (9-inch) double crust pie
6 cups tart apples, peeled and sliced
1/2 cup light brown sugar, packed
1/4 cup white granulated sugar
2 tbsp flour
2 tsp lemon juice
1/4 tsp salt
1/8 tsp ground nutmeg
1/8 tsp grated lemon rind
1 tbsp butter or margarine

Line a 9-inch pie pan with pastry.

Mix together the remaining ingredients, except the butter and fill pie shell, laying apple slices flat. Dot with the butter.

Roll out top crust and cut slits in several places for steam to escape. Moisten edges of bottom crust well with cold water and adjust top crust over the filling. With fingers or fork, pinch the two crusts together to make a tight seal around pie.

Bake in very hot oven (450 degrees F) for 15 minutes. Reduce heat and bake 45 to 50 minutes longer.

Makes 1 (9-inch) pie
