OLIVE AND POTATO SALAD
500g organic new potatoes
100g black and green olives (stones removed)
1 organic red onion
1tbsp fresh parsley, chopped
2 to 3 tbsp mayonnaise, thinned with a little milk
Salt and pepper to taste
Boil the potatoes in their jackets until tender and then run under a cold tap to cool. Peel and dice.
Cut the olives in half and fold into the potatoes with the onions and parsley.
Finally, stir through the mayonnaise and season with salt and pepper.
