Spinach and Orange Salad
1/3 cup olive oil
1/3 cup balsamic vinegar
2 Tbsp. orange juice
1 Tbsp. grated orange peel (optional)
Salt and freshly ground black pepper to taste
6 cups fresh baby spinach, washed and patted dry
2 medium oranges, peeled, sectioned and pith removed
1 cup shredded carrot
1/2 cup very finely sliced red onion
2 Tbsp. toasted chopped walnuts
1/2 cup reduced-fat feta cheese, crumbled
For dressing, in small bowl, whisk together oil, vinegar, orange juice, orange peel, salt and pepper and set aside.
In six salad bowls, divide spinach evenly. Arrange orange sections on top. Sprinkle greens with carrot, onion and walnuts. Drizzle salads with dressing; sprinkle feta on top.
Makes 6 servings
Per serving: 190 calories, 15 g total fat (2 g saturated fat), 12 g carbohydrates, 4 g protein, 2 g fiber, 183 mg sodium.
