Recipe: Sweets and Nuts Slaw (using sweet potatoes)

Sweets and Nuts Slaw

2 cups shredded raw sweet potatoes
1 cup diced apples
1 tbsp. lemon juice
1/2 cup thinly sliced celery
1/2 cups raisins
1/3 cup sunflower seeds or toasted slivered almonds
2 tbsp. chopped parsley
1/3 cup reduced fat mayonnaise

In bowl, toss Sweet Potatoes with ice water. Let stand several minutes; drain.

In clean bowl, toss apples with lemon juice. Add Sweet Potatoes and remaining ingredients; blend well. Chill until ready to serve.
