Recipe: One Bowl Yellow Cake

One Bowl Yellow Cake

2 cups cake flour, sifted
1 1/3 cups sugar
2 1/2 tsp baking powder
1 tsp salt
1/2 cup shortening
7/8 cup milk
1 1/2 tsp vanilla
2 eggs

Sift flour, sugar, baking powder and salt into mixing bowl. Drop in shortening. Add 2/3 of milk and vanilla. Beat 150 strokes. Add eggs and beat 250 strokes. Add remaining milk and beat 50 strokes. Bake in 2 (8-inch) layer pans 375 for 25 to 35 minutes.
